Obicà Recipes: Frangipane

A sweet touch for your days with this recipe that combines the aroma of Almonds and the taste of Pears

Among the Obicà recipes we’ve been sharing with you during the last couple of weeks, sweetness is what that really helps make more pleasant our stay at home. So, here’s the recipe of another delicious dessert from our Menu: the Frangipane!


The Frangipane is a pear tart with a soft consistency and a delicate taste that you can easily prepare at home. You can then enjoy it at breakfast with a hot coffee, while reading a good book in the afternoon or - why not - after an excellent dinner with other Obicà recipes.


Even this time, as for our Panna Cotta all’Amarena, we suggest you to make a little bit more portions, so you can have your Frangipane whenever you want.


Let's find out how to prepare it!


INGREDIENTS

for five portions


125 gr of Butter

125 gr of Sugar

125 gr of Almond Flour

3 Eggs

150 gr of Pears

20 gr of Almonds


PREPARATION


In a large container, break the Eggs and add the Sugar.

Then stir vigorously with a kitchen whisk or a fork until the Eggs reach a frothy consistency.

In the meantime, let the Butter rest at room temperature so that it becomes soft and easy to shape.

Now wash the Pears, peel and grate them in the container. We recommend the "Williams" variety, because it has a perfect consistency for our Frangipane, but you can easily choose the variety that you prefer.

Now that the Butter has softened, add it to the other ingredients and mix until you get a cream with a soft and thick consistency.

Pour the cream into the cocottes, while preheating the oven to 165 degrees.

Before baking them in the oven, cover the cocottes with aluminum foil - just be sure that the foil doesn’t touch the tart.

In the end cook them for 45 minutes.

HOW TO SERVE


Once baking is complete, remove the cocottes from the oven and let the Frangipane rest for about ten minutes to serve it warm.

The final touch in our restaurants is a ball of Vanilla ice cream right in the middle of the dessert.

But you can also pair it with fresh seasonal fruit.
