Let’s find out together!

In Central Veneto

The authentic Radicchio Rosso di Treviso IGP is produced only in 24 towns in the provinces of Treviso, Padua and Venice.

We are in a plain in Central Veneto, with fertile soil and very rich in water. The abundance of water and the climate with warm summers and harsh winters create a unique habitat for the Red Trevisano Radicchio, which is grown in these areas since the 16th Century.

A traditional production

In addition to the characteristics of the area, the uniqueness of this product is mainly caused by the production technique.

The main stages are forcing and bleaching: right after harvesting, the bunches of Radicchio are tied in large bundles and put in tanks with resurgent water. Here the Radicchio ages for about 20/25 days, while its roots take on the typical white color.

Colors and flavors

The white of the dorsal rib is paired with the intense winy red of the leafs.

Compared to the “precoce” variety, the Late-growing Radicchio has a less bitter taste and is more crunchy in texture: for an unforgettable tasting experience.

The winter cuisine

The Late-growing Red Trevisano Radicchio is the main star in delicious dishes during the coldest months of the year.

Its pleasant bitter taste is perfect to mix with other products to enhance (or balance) its flavor: that's why we paired it with Smoked Burrata, but also with Oranges, Pine Nuts, Balsamic Vinegar and Blueberries.
