Obicà Recipes: Insalata Burrata e Cavolini
To help you make the most out of these days of filling spreadsheet pretending to work, reading a good book and watching an episode of your favorite TV serie, here is another Obicà original recipe, after our signature Pappardelle with Sausage Ragù.
Springtime is here, so today we decided to focus on lightness, offering you a Salad with the typical fresh and genuine ingredients of our cuisine: the Burrata e Cavolini Salad!
An easy-to-do recipe, for a tasty break while smart working at home.
for two people
2 Burrata from Puglia 125 gr each
150 gr of Brussel Sprouts
100 gr of Lamb’s Lettuce
60 gr of Apple
15 gr of Raisins
40 gr of Almonds
10 gr of Crusco Pepper from Senise IGP
Salt to taste
Black Pepper to taste
Extra Virgin Olive Oil
Start by finely cutting the Brussel Sprouts and put them in a bowl large enough to contain all the ingredients.
Peel and dice the Apples.
Then add the Raisins - previously softened in warm water.
Now season with Oil, Salt, Pepper and Lemon to your taste.
Let it stand for about 30 minutes, so that the Brussel Sprouts marinate with the Lemon and slightly soften.
HOW TO SERVE
Place the Lamb’s Lettuce on the plate as the base of the Salad.
Add the mixture with Brussel Sprouts, Apples and Raisins.
Chop the Crusco Pepper, put it on the Salad and then add the Almonds.
The final touch is a fresh Burrata from Puglia, to place right in the center of the Salad.
